Lentil & Barley Soup

A warm and filling soup for a day when you need a high carbohydrate boost- perfect for those of us who are running at Apollo Bay tomorrow! Great for pre-race dinner tonight OR post-race refuel tomorrow!.  This Lentil & Barley Soup is very easy to make and if you would like additional protein I add chicken breast.

Ingredients:

  • 1 onion, diced
  • 2 tbl olive oil
  • 2 garlic cloves, crushed
  • 1 tsp cumin
  • 1 tsp turmeric
  • 1 tsp ground coriander
  • 6 cups chicken stock (or for vegetarian option vegetable stock)
  • 2/3 cup pearl barley, par-cooked
  • ¾ cup red lentils, rinsed
  • 1 ½ cups chopped broccoli
  • 1 ½ cups chopped cauliflower
  • salt & pepper
  • ¼ cup lemon juice
  • 2 tsp coriander, chopped
  • PROTEIN BOOST: 2 chicken breasts, finely sliced
  1. Put barley in a saucepan and cover with water, bring to the boil and cook until water has evaporated – careful not to burn!
  2. Put the onion, oil and garlic in a big pot, cook onion until it is soft (not brown)
  3. Add the cumin, turmeric and coriander and cook for 3 minutes
  4. Add the stock, pearl barley, lentils, broccoli & cauliflower (add chicken)
  5. Simmer for 30 – 40 minutes or until thick and barley is tender
  6. Add salt & pepper, lemon juice and coriander
